近期美国多个州报告奶牛被高致病性禽流感感染。美国FDA发布公告称，约20%的杂货店抽检牛奶样品核酸检测阳性。这么一来牛奶还敢喝吗？

据《今日美国》等多家媒体报道，FDA和美国农业部的回应是，牛奶杀菌过程可靠，且患病奶牛的奶已销毁，市售产品可以安全饮用。

美国要求牛奶经巴氏消毒法处理才能销售，生牛奶即使存在细菌病毒，处理后对人类没有危害，然而加热失活的病毒碎片还会残留并被检测到。至于病毒碎片还有没有毒性，还需要进一步证实。此前研究称，含禽流感病毒的鸡蛋经巴氏消毒后很安全。

当然，生牛奶不安全。FDA建议，有流感症状或有密切接触史奶牛的生牛奶，不应饮用或制成奶酪等其他奶制品；所有奶牛运输前需做禽流感检测，呈阳性的奶牛必须隔离30天，转移前再做检测。

禽流感会在人类中爆发吗？目前已有数十人接受了检测，尚没发现对人有高威胁性的变异体，，还没有通过食物或人与人间传播的案例。

专家警告，不能对禽流感传人掉以轻心。禽类和牛可将猪感染，而猪的病毒受体和人很像。如果病毒在猪群中大规模爆发，很可能进化出适合人类传播的变异体。
